SIXFOLD VI: WILD SOUR WITH TART CHERRIES

Aged for over a year in red wine barrels, we added a blend of locally grown whole tart cherries and Montmorency tart cherries from Michigan to our Wild Sour, at a rate of 2 lbs per gallon, then tucked away for several more months. Light red in color with aromatics of fresh cherries, the fruit compliments the funky notes produced by brettanomyces during oak aging.
